  • 1 pound dried pasta (like penne or rotini)
  • 1 tablespoon olive oil
  • 1 pound kielbasa sausage, sliced into half-inch rounds
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the sliced kielbasa and cook until browned on both sides, about 5 to 7 minutes. Remove the sausage with a slotted spoon and set it aside, leaving any rendered fat in the pan.
  2. Add the chopped onion to the skillet and cook until softened, about 4 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Pour in the chicken broth, Italian seasoning, salt, and pepper. Bring the mixture to a boil.
  4. Add the dried pasta to the boiling broth. Reduce the heat to medium-low, cover the skillet, and simmer for 10 to 12 minutes, stirring occasionally to prevent sticking, until the pasta is nearly tender and most of the liquid is absorbed.
  5. Stir in the heavy cream and the cooked kielbasa. Continue to cook, uncovered, for 2 minutes, allowing the sauce to thicken slightly.
  6. Remove the skillet from the heat. Stir in the cheddar cheese, Monterey Jack cheese, and Parmesan cheese until the sauce is smooth and creamy.
  7. Serve the cheesy sausage pasta immediately.

Notes

  • For a richer flavor, use smoked Polish kielbasa.
  • You can substitute the cheese blend with Gruyère or smoked Gouda for a different taste profile.
  • If the sauce seems too thick when serving, stir in a splash of milk or extra broth to reach your desired consistency.
