Ingredients
Scale
1 lb ground beef (80/20 recommended)
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/2 teaspoon onion powder
4 slices cheddar cheese
4 cups shredded iceberg or romaine lettuce
1/2 cup sliced dill pickles
1/2 cup diced tomato
1/4 cup diced red onion
For the Secret Sauce: 1/2 cup mayonnaise
2 tablespoons ketchup
1 tablespoon yellow mustard
1 tablespoon sweet pickle relish
1 teaspoon apple cider vinegar
Instructions
Prepare the Secret Sauce: In a small bowl, combine the mayonnaise, ketchup, mustard, relish, and apple cider vinegar. Mix well until smooth. Set aside.
Cook the Beef: In a large skillet over medium-high heat, add the ground beef. Break it apart with a spoon. Season the beef with salt, pepper, garlic powder, and onion powder. Cook until the beef is fully browned, about 6 to 8 minutes. Drain off any excess grease.
Melt the Cheese: Reduce the heat to low. Place the cheese slices over the cooked beef. Cover the skillet for 1 to 2 minutes, or until the cheese is fully melted and gooey.
Assemble the Bowls: Divide the shredded lettuce evenly among four serving bowls. This forms your low-carb base.
Layer the Ingredients: Spoon the cheesy ground beef mixture over the lettuce in each bowl.
Add Toppings: Top each bowl with pickles, diced tomato, and diced red onion.
Serve: Drizzle a generous amount of the homemade secret sauce over the top of each bowl. Serve immediately.
Notes
For a different base, substitute the lettuce with 1 cup of cooked white rice or cauliflower rice per serving.
Add crispy bacon bits or sliced avocado for extra flavor and fat content.
This recipe is excellent for meal prep; store the cooked beef mixture separately from the fresh toppings and sauce until ready to eat.
