4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried oregano
1 cup cherry or grape tomatoes, halved
4 ounces fresh mozzarella cheese, sliced or torn
1/4 cup balsamic vinegar
2 tablespoons brown sugar
1 tablespoon Dijon mustard
2 cloves garlic, minced
1/4 cup fresh basil leaves, chopped, for garnish
Instructions
Season the chicken breasts on both sides with salt, pepper, and dried oregano.
Heat the olive oil in a large oven-safe skillet over medium-high heat. Place the chicken in the hot skillet and cook for 5 to 7 minutes per side until golden brown and cooked through (internal temperature reaches 165 degrees F). Remove the chicken from the skillet and set it aside on a plate.
Reduce the heat to medium. Add the halved tomatoes to the skillet and cook for 3 minutes until they begin to soften. Add the minced garlic and cook for 1 minute until fragrant.
In a small bowl, whisk together the balsamic vinegar, brown sugar, and Dijon mustard to create the glaze.
Pour the balsamic mixture into the skillet with the tomatoes. Bring the sauce to a simmer and cook for 2 minutes, stirring constantly, until the sauce thickens slightly.
Return the cooked chicken breasts to the skillet. Arrange the fresh mozzarella slices or pieces over the top of each chicken breast.
Cover the skillet and cook on low heat for 2 to 3 minutes, or until the mozzarella is melted and gooey. Alternatively, place the skillet under the broiler for 1 minute to melt the cheese, watching carefully to prevent burning.
Remove the skillet from the heat. Sprinkle the fresh chopped basil over the chicken before serving immediately.
Notes
For a low carb chicken skillet, skip the brown sugar in the glaze and use a sugar-free balsamic glaze or reduce the amount of regular balsamic vinegar used.
If you do not have an oven-safe skillet, you can finish the dish by placing the skillet over low heat with a lid on until the cheese melts.
