3 lbs sweet potatoes, peeled and sliced into 1/2-inch rounds
1/2 cup unsalted butter, melted
3/4 cup packed light brown sugar
1/4 cup pure maple syrup
1/4 cup water
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Pinch of salt
Instructions
Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
Arrange the sweet potato slices in a single layer in the prepared baking dish.
In a medium bowl, whisk together the melted butter, brown sugar, maple syrup, water, vanilla extract, cinnamon, nutmeg, and salt until the sugar dissolves. This creates your brown sugar glazed sweet potatoes sauce.
Pour the glaze evenly over the sweet potato slices.
Bake for 40 to 50 minutes, basting the potatoes with the pan juices every 15 minutes. The potatoes are done when they are fork-tender and the sauce has thickened into a sticky sweet potato bake glaze.
Remove from the oven and let the dish rest for 5 minutes before serving. The glaze will continue to thicken as it cools.
Notes
For a marshmallow topping, sprinkle mini marshmallows over the potatoes during the last 5 minutes of baking.
If you prefer a slightly spicier flavor, add a tiny pinch of cayenne pepper to the glaze mixture.
You can prepare the sweet potatoes and glaze ahead of time; cover and refrigerate for up to 24 hours, then add 10-15 minutes to the baking time.
