Make this refreshing summer salad combining sweet blueberries and peaches with salty feta cheese, topped with a simple balsamic vinaigrette. It is a perfect light lunch or side dish.

  • 5 ounces baby spinach
  • 2 cups fresh blueberries
  • 2 ripe peaches, sliced
  • 4 ounces crumbled feta cheese
  • 1/2 cup chopped pecans or walnuts
  • 1/4 cup olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Prepare the vinaigrette: In a small bowl, whisk together the olive oil, balsamic vinegar, honey, and Dijon mustard until combined. Season with salt and pepper. Set aside.
  2. Wash and dry the baby spinach. Place the spinach in a large salad bowl.
  3. Arrange the sliced peaches and fresh blueberries over the spinach.
  4. Sprinkle the crumbled feta cheese and chopped pecans or walnuts evenly over the fruit and greens.
  5. Just before serving, drizzle the balsamic vinaigrette over the salad. Toss gently to coat all ingredients.
  6. Serve immediately as a gourmet side dish or light lunch salad.

  • For make ahead appetizer salads, store the dressing separately and toss just before serving to keep the spinach crisp.
  • If you do not have pecans, toasted slivered almonds work well in this sweet and savory salad combination.
