Make this classic Italian cocktail using fresh peach puree and chilled Prosecco. This easy bellini recipe is perfect for brunch, parties, or any celebration.

  • 1/2 cup fresh peach puree
  • 4 oz chilled Prosecco (or sparkling wine)
  • 1 small peach, sliced for garnish (optional)

Instructions

  1. Chill your Prosecco thoroughly before starting.
  2. Prepare the fresh peach puree by blending ripe peaches until smooth. Strain the puree through a fine-mesh sieve if you prefer a pulp-free texture.
  3. Chill your champagne flutes.
  4. Pour 2 ounces of peach puree into each chilled flute.
  5. Slowly top with 4 ounces of cold Prosecco. Pour gently to maintain the bubbles.
  6. Garnish each glass with a thin slice of fresh peach on the rim. Serve immediately.

Notes

  • For an authentic taste, use white peach puree. If fresh peaches are out of season, use high-quality canned peach halves packed in juice, drained well.
  • To make a Strawberry Bellini, substitute the peach puree with 2 ounces of fresh strawberry puree.
  • For a low-alcohol option, use sparkling white grape juice instead of Prosecco.
