4 oz chilled Prosecco (or sparkling wine)
1 small peach, sliced for garnish (optional)
Instructions
Chill your Prosecco thoroughly before starting.
Prepare the fresh peach puree by blending ripe peaches until smooth. Strain the puree through a fine-mesh sieve if you prefer a pulp-free texture.
Chill your champagne flutes.
Pour 2 ounces of peach puree into each chilled flute.
Slowly top with 4 ounces of cold Prosecco. Pour gently to maintain the bubbles.
Garnish each glass with a thin slice of fresh peach on the rim. Serve immediately.
Notes
For an authentic taste, use white peach puree. If fresh peaches are out of season, use high-quality canned peach halves packed in juice, drained well.
To make a Strawberry Bellini, substitute the peach puree with 2 ounces of fresh strawberry puree.
For a low-alcohol option, use sparkling white grape juice instead of Prosecco.
If you want a slightly sweeter drink, add 1/4 ounce of simple syrup to the puree before adding the wine.
