  • 2 very ripe medium bananas, mashed

  • 1 teaspoon vanilla extract

Instructions

  1. Combine the rolled oats, water or milk, cinnamon, and salt in a medium saucepan.
  2. Bring the mixture to a boil over medium-high heat, stirring occasionally.
  3. Reduce the heat to medium-low. Stir in the mashed bananas.
  4. Cook for 5 to 7 minutes, stirring frequently, until the oatmeal thickens and becomes creamy. The mashed banana will dissolve and sweeten the oats.
  5. Remove the saucepan from the heat. Stir in the vanilla extract and maple syrup, if using.
