Make comforting, tender apple fritters in your oven instead of a deep fryer. This easy recipe delivers classic fall flavor with warm cinnamon and a sweet vanilla glaze, perfect for breakfast or dessert.

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar
  • 1 large egg, lightly beaten
  • 1/2 cup milk
  • 2 tablespoons melted unsalted butter
  • 1 cup finely diced peeled apples (about 1 medium apple)
  • 1/4 cup powdered sugar (for glaze)
  • 1 tablespoon milk or water (for glaze)
  • 1/4 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper. Lightly spray the paper with cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  3. In a separate small bowl, whisk together the granulated sugar, egg, milk, and melted butter until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined. Do not overmix; a few lumps are fine.
  5. Fold in the diced apples gently.
  6. Drop rounded tablespoons of the batter onto the prepared baking sheet, spacing them about 2 inches apart. You should get about 10 to 12 fritters.
  7. Bake for 12 to 15 minutes, or until the tops are lightly golden brown and a toothpick inserted into the center comes out clean.
  8. While the fritters bake, prepare the glaze. In a small bowl, whisk together the powdered sugar, 1 tablespoon of milk or water, and vanilla extract until smooth. Add more liquid, half a teaspoon at a time, if the glaze is too thick.
  9. Remove the baked apple fritters from the oven and let them cool on the baking sheet for 5 minutes.
  10. Transfer the warm fritters to a wire rack. Drizzle the vanilla glaze over the warm fritters immediately. Serve warm for the best texture.

Notes

  • For crispier edges, you can lightly spray the tops of the unglazed fritters with cooking spray before they go into the oven for the last 5 minutes of baking.
  • Use firm, slightly tart apples like Granny Smith for the best texture after baking.
  • If you prefer a stronger cinnamon flavor, add an extra 1/4 teaspoon of cinnamon to the batter.
