  • 1 large egg, lightly beaten
  • 1/4 cup all-purpose flour

  • 1 teaspoon lemon zest
  • 1/2 teaspoon black pepper
  • Cooking spray (for air fryer)
  • For the Aioli: 1/2 cup mayonnaise, 1 tablespoon fresh lemon juice, 1 small garlic clove minced, 1 teaspoon dried dill

Instructions

  1. Grate the zucchini using the large holes of a box grater. Place the grated zucchini in a colander and toss with 1 teaspoon of salt. Let it sit for 15 minutes to draw out moisture.
  2. Squeeze the zucchini very dry using a clean kitchen towel or several layers of paper towels. This step is crucial for crispy fritters. Discard the liquid.
  3. In a medium bowl, combine the dried zucchini, beaten egg, flour, Parmesan cheese, chives, lemon zest, and pepper. Mix until just combined. Do not overmix.
  4. Preheat your air fryer to 380°F (195°C). Lightly spray the air fryer basket with cooking spray.
  5. Form the mixture into small, flat patties, about 2 inches wide and 1/2 inch thick. You should get 8 to 10 fritters.
  6. Place the fritters in the air fryer basket in a single layer, ensuring they do not touch. You may need to cook in batches. Spray the tops lightly with cooking spray.
  7. Air fry for 8 to 10 minutes, flipping halfway through. Continue cooking until the fritters are golden brown and crisp on the outside.
  8. While the fritters cook, prepare the aioli: Mix the mayonnaise, lemon juice, minced garlic, and dill in a small bowl.
  9. Serve the hot air fryer zucchini fritters immediately with the lemon herb aioli.
