Create incredibly buttery, melt-in-your-mouth cookies using only three basic pantry staples: butter, sugar, and flour. This no-fuss recipe requires no mixer and is perfect for quick baking.

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream the softened butter and powdered sugar together until the mixture is light and smooth. You can use a hand mixer or a sturdy spoon for this step.
  3. Gradually mix in the all-purpose flour until a soft dough forms. Do not overmix the dough once the flour is incorporated.
  4. Roll the dough into small balls, about 1 inch in diameter, or shape it into a log and slice into rounds. Place the cookies on the prepared baking sheets, leaving space between them.
  5. Bake for 10 to 12 minutes, or until the edges are just starting to turn light golden brown. The centers should remain pale.
  6. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a shortbread style cookie, chill the dough for 30 minutes before shaping and baking.
  • If you prefer a slightly crisper cookie, use granulated sugar instead of powdered sugar.
  • These cookies are excellent plain, but you can press a thumbprint into the center before baking to hold a small amount of jam for a quick variation.
